Keep It Green Strawberry Pistachio Vegan Smoothie

The story behind it

You know what I love? Smoothies (obviously), what do I love more than smoothies? (Heresy! I know…) Smoothies with pistachios, they’re one of my all-time favorite ingredients.

They have everything you could want, great texture, flavor and they’re healthy too.

Ingredients

1 cup shelled, roasted pistachios
3 cups frozen strawberries
1 cup unsweetened vanilla almond milk
1 cup water
1 1/2 Tbsp pure maple syrup (optional)

Why is it so good for you

Pistachios are freaking awesome! They’re high in protein and fiber, but are low in calories, they have been around for some 9,000 years (at least). They’re also crazy high in potassium, a single ounce of pistachios has more potassium than half of a large banana.

Your body needs potassium, just like it needs protein to build new cells and muscles, so don’t neglect that from your diet either.

Additionally pistachios are great for your blood vessels, as they are a great source of the amino acid L-arginine, which converts to nitric oxide in the body.

Why do I need nitric oxide? It reduces muscle sores and improve physical performance, both at the gym and.. Well you know…

So put some pistachios in or on your smoothie as a garnish, and get into them with this recipe.

Preparation

Place your pistachios in a bowl and cover completely with water. Soak for at least 3 hours or overnight on the counter. Drain the water and rinse the pistachios.
